The Anticipation...The Let Down...

So I tried a new recipe in the crock pot yesterday. I love my crock pot because you can literally throw the stuff in it and leave it alone for hours, usually a yummy and delicious meal is waiting for you when you return...

The recipe I tried was for a turkey breast cooked in orange marmalade and whole cranberry sauce. Sounded so yummy and easy. All day I let it perk, the recipe had said for 8-10 hours on low for a 3lb breast so I went with 8 hours for a 2.5lb turkey. Because of previous turkey incidents I am always paranoid about under cooking...

It had a nice color to it when I took it out but unfortunately it was SOOOOO dry! OOPS!!! Maybe a little less cook time would have been a better idea. You really couldn't taste much of the cranberry or orange flavor.



Fortunately I had a spare can of cranberries in the pantry to go with the meal to help us choke down the very dry turkey. Which I so nicely served with a spoon scooped directly from the can. Talk about a classy meal! And it is always fun to serve a meal in which you turn around and apologize for how bad it was directly after serving!!! I guess that is what I get for trying to branch out of my usual standard meal plan... :)

Whoohoo!!!



Yesterday, my friend Melissa had her twin boys! Whoohoo! Happy Birthday to Henry and Hudson!!! I cannot wait to meet them! They came a little early but are doing well, as is their mommy. They hope to be home by Saturday!


Grandma and Grandpa also came for a short visit on their way to Atlanta. Evelyn really enjoyed showing off her new tricks to them. While they were here we went to walmart and got a new toy for the whole family! A very cool bicycle seat for the little one to ride in! A while back we bought ourselves awesome beach cruiser bicycles, but since the little one arrived we have not ridden them much at all. We have really missed riding them around the neighborhood and over at the beach. We are thrilled that she can finally go with us!


She really seem to enjoy riding with her daddy! The only thing she was not thrilled about was the adorable barbie helmet that we put on her! It needs a little adjustment because apparently a one year old helmet is not something you can readily buy but I think with a little extra padding we can make this one work. Safety first, I guess. Gone are the days when kids learned the lesson the hard way, with scrapes, bruises and occasional head injuries! ;)

Spring is in the Air!


After months in the storage building, safe and sound for the winter, I finally brought out my FAVORITE yard tool! The Lawnmower!!!! For whatever reason I just really love to cut the grass. I find it so satisfying to make a pattern in the grass with the mower. Now the yard doesn't look so much like winter as you can finally see some blades of green poking through. Spring is finally here!

Dr Doom and Gloom...


Yesterday was Evelyn's second appointment with the eye doctor. I like to refer to him as Dr. Doom and Gloom. He is straight forward and to the point but seems to care very little about the emotional side of his work. He is very honest about his opinion which I do like but personality wise I prefer all of her other doctors over him.
We did have some encouraging news however, he feels her vision is good and that there is no need for glasses at this time. He has however recommended surgery to pull her eyes to the right. She tends to focus to the left at this point. Which he has said that if it is left untreated will result in a head tilt. He recommended that the surgery be done at some point in the next 6 months to a year but that we didn't need to rush into it. We are due to see him again in 6 months unless we feel that it is affecting her walking ability in which case we can go in sooner.
I think at this point we will be getting a second opinion. Not that I don't believe his diagnosis but we are talking about a vital piece of the little one, her eyes! I will be talking to her pediatrician next week for another referral. If my Internet research is correct than there are 4 other pediatric opthamologist in town and 7 more in the state.
I hope everyone had a great week, TGIF! It's off to the beach for us this weekend the temps will be in the upper 70s Whoo hoo! :)
